Tomato Mozzarella and fresh Arugula with touch of Basil Vinaigrette dressing

TOMATO MOZZARELLA AND FRESH ARUGULA WITH TOUCH OF BASIL VINAIGRETTE DRESSING


COLOUR: Green and Red
GARNISH: Chives
PORTION: 1 portion

METHOD:
* Cut Tomatoes, Mozzarella cheese and Orange in to thin slices.
* Grill the Orange slice and keep a side.
* Mix slices Tomatoes, Mozzarella Cheese and Arugula lettuce with Basil Vinaigrette and keep it for 5-7 minutes.
* Arrange Tomato and Mozzarella in a platter. Put marinated Arugula lettuce on the top of them.
* Place grilled orange slice near to the salad.
* Garnish the salad with Chives.

TO MAKE BASIL VINAIGRETTE
1.      Put the garlic in a food processor and pulse to mince.
2.      Add the basil leaves and pulse a few times.
3.      Add the olive oil, lemon juice, and mustard and process until fully combined and emulsified.
4.      Season with salt and pepper.
