METHOD:
* Wash lamb cubes thoroughly and strain it in a strainer.
* Add peeled garlic, peeled ginger, salt, chili powder, and fresh coriander brown onion and coriander chop.
* Mince it for six times.
* Add garam masala, Gulab jal, raw papaya paste, Besan, saffron, attar and ghee to the mixture. Mix all together and very finely. Mixing is a very important part of this recipe.
* Once done, take two piece of charcoal in a copper bowl add 2 clove and pour ghee on top heat. And kept it inside the mix and cover it nicely.
* Divide the mixture into equal portions and shape them into small round tikkis.
* Heat the oil in a pan and cook the tikkis till they turn golden brown and crisp from both the sides. Serve mughlai paratha below it.

METHOD-

* Mix mutton and curd in a bowl with salt, and keep aside.
* Heat oil in a pan, add whole garam masala, when they start to crackle, add chopped onions and fry till golden brown.
*Add ginger-garlic paste and fry again for two minutes.
*Add all the masala powder and fry till oil comes up.
* Now add marinated mutton and stir fry on a high flame for 2-3 minutes.
* Now add water and little salt and cook with closed lid till meat gets tender and gravy is medium thick in consistency.
* we have already added salt while marinating the mutton, so adjust the seasoning accordingly.
* Now add cream and stir well and cook for another 2-3 minutes.
* Garnish with chopped coriander.
* Serve with Rice, pulao or roti if you like.

Methi Mutton

METHI MUTTON

Turmeric powder

Red chilli powder
1 tsp
Coriander powder
1 tsp
Yogurt
1 cup
Dry fenugreek leaves (kasuri methi)
2 tbsp
Garam masala powder
1 tsp
Salt
To taste
METHOD:
* Wash and cut mutton into medium sized pieces. Peel, wash and chop onions. Peel, wash and chop ginger. Remove stems, wash and chop green chillies. Wash and chop coriander leaves
* Heat oil in a pan. Add bay leaves, green cardamoms, black cardamoms, cloves, cinnamon and peppercorns. Sauté until cardamoms start to crackle.
* Add onions and cook until translucent and soft. Make sure to stir continuously. Add ginger, garlic paste, turmeric powder, red chilli powder, coriander powder and chopped green chillies. Sauté for a minute.
* Add chicken pieces and beaten yogurt and cook on high heat for seven to eight minutes. Add kasoori methi and three-fourth cup of water.
* Cover the pan and cook on low heat for ten minutes. Add garam masala powder, salt and mix properly. Serve hot garnished with chopped fresh coriander leaves.
